What IS Indian cuisine? And NO, it’s not synonymous with the curry from the takeaway down the street. India has 36 states and union territories, each with its own language, culture and a cuisine which is just as diverse. We hence discover the sheer spectrum, which can never fit under the tag “Curry”.
You will learn to make a variety of regional dishes, typical of the ingredients,
culture and influences of that area. When one region has influence of coconut,
other shifts towards mustard, and then yet another towards lentils and greens, each unique in its flavours and textures.
You will learn to make dishes like Kerala Chicken Curry, Punjabi Tadka Dal,
Kolkata Kathi Rolls to name a few.
